Yeast Waffles


Ingredients:

125g butter or margarine

25g fresh yeast

400ml milk

100ml (250g) wheat flour

Method:

  1. Melt the butter and let it cool down.
  2. Crumble the yeast into a mixing bowl and stir in the milk. Add flour and continue stirring to a smooth batter.
  3. Stir in the melted butter and let the batter rise for 20 minutes.
  4. Cook the waffles in waffle iron suggestions when serving:

Sweet toppings:

-Serve with sugar mixed with cinnamon on top, or

-Spread some butter and jam, or

-Pour on some melted chocolate or

Savory toppings:

-Have it with some curry

-Melted cheese and tomato sauce

-Devilled sausages

Apple Pancakes



Ingredients:

100 gm flour

2 eggs
250 ml milk

1 tsp oil


Filling:


Apples 750 gm peeled, cored and chopped (roughlychopped) butter 1 tsp rind 1 lemon grated chopped candied peel 25 gm 25 gm raisins 2-3 tbsp sugar.


Meringue:


3 egg whites
150 gm castor sugar Method: To prepare crepes, add liquid ingredients to the flour and form a smooth batter. Leave the batter for 15 minutes before preparing pancakes in an oiled pan. Soften apples in butter over a gentle heat with lemon rind. Add remaining ingredients. Use to fill pancakes, then roll and arrange in a buttered ovenproof dish. Whip egg whites until stiff, gradually whisking in castor sugar. Spoon or pipe over pancakes. Brown in a hot oven before serving.
